Chicken and Sweet Pepper Linguine Alfredo Servings: 4
Ingredients:
6 oz whole wheat linguine
2 tsp canola oil
1 Red bell pepper, cut into thin strips
1 Zucchini (halved lengthwise and cut into 1 inch slices)
1 Yellow squash (halved lengthwise and cut into 1 inch slices)
8oz. Raw chicken Stir fry strips
10oz. Light alfredo pasta sauce
2 tsp Fresh thyme
Black pepper to taste
Instructions:
Cook linguine according to package, and then set aside.
Meanwhile, heat 2 tsp oil in skillet on medium-high heat. Add red bell pepper and chicken. Cook until chicken is no longer pink. Add zucchini and yellow squash. Cook until desired tenderness.
Stir in pasta sauce and 2 tsp fresh thyme, and heat through.
Pour sauce over linguine and gently toss to coat. Sprinkle with black pepper to taste.
Serve, enjoy!
